Avocado Toast with Fried Egg

Am I a foodie if I don't post an avocado toast with fried egg recipe? In 2021, that's definitely the most popular recipe you'll find, so I'm here to share mine! It is such a delicious combo for either breakfast, brunch, or lunch. You'll get your protein, carbs, and fats all in one bite! So let's get to it!


Yields: 2

Prep time: 5 minutes

Total time: 15 minutes


This recipe is dairy free, gluten free, and vegetarian.

 


Ingredients:

1. 2 eggs

2. 2 pieces of whatever bread you like: sourdough, rye, wheat, multigrain, pumpernickel, or GF if need be

3. 1 TBSP of chopped parsley

4. 1 TBSP chopped scallions

5. ½ avocado

6. Pink Himalayan salt

7. black pepper, oregano, red pepper,

8. ¼ squeezed lemon

9. sprinkle of hemp seeds

10. Extra virgin olive oil

 

Instructions:

1. First, grab the bread and toast them.

2. Next, in a bowl mash half the avocado and add salt, black pepper, and oregano to your liking and continue to mash.

3. Add the avocado onto the toast and use a fork to make those cute lines in the toast

4. In a pan add a TBSP of EVOO and let it simmer on medium heat.

5. Crack two eggs and don’t touch. Once they are cooking split them down so that they equally have their own yolk and aren’t touching anymore.

6. Do not touch the yolk. Let the eggs just cook on medium heat for 5 minutes. Once you see the egg looking crunchy on the sides add a dash of red pepper and place one egg onto each avocado toast.

7. Finely dice the scallion and parsley and sprinkle over the eggs.

8. Add a sprinkle of hemp seeds and enjoy!
