Dairy Free Syrian Rice Pudding

It is the end of the month of Ramadan for the Muslim community and it is followed with Eid Al-Fitr, which is a three-day festival of "breaking the fast." Today is the third day of Eid and I wanted to share my absolute FAVORITE dessert I grew up having during this time.

Syrian Rice Pudding also known as, "Rezz Bil-Halib". It is such a delicacy and SO easy to make. I was always intimidated by this recipe but once I made it myself this week, I was shocked at how easy it was to make. Normal Syrian rice pudding calls for whole milk, which is completely fine to use, BUT I made this recipe dairy free for my DF homies out here. I want everyone to be able to enjoy the foods they love without having to stress about their gut hurting. All you're going to need is almond milk, rice, rose water, orange blossom water, sugar, and pistachios. Let's get to the recipe!

Yields: 8-10 (because rice pudding should be enjoyed with others <3)

Prep time: 2 minutes

Total time: 30-40 minutes (depends on how strong your stove top is)


This recipe is dairy free, gluten free, vegetarian, and vegan.

 

Ingredients:

1. 1/2 cup short grain rice (washed beforehand)

2. 1 TSP rose water

3. 1 TSP orange blossom water

4.,1 32fl oz of almond milk (I'd recommend using Almond Breeze because it has gellan gum which allows the pudding to be thicker)

5. 3/4 cup of white sugar

6. Pistachios to garnish

 

Instructions:

1. In a large pot on medium heat, add in the carton of almond milk and the short grain rice.

2. Stir well and allow it to come to a boil. Don't let the rice stick to the bottom of the pot, keep stirring once in a bit.

3. Once it comes to a boil, lower the heat and allow it to simmer for another 10 minutes or so.

4. Now, add in the sugar, rose water, and orange blossom water and stir for 1 minute or so.

5. Now, grab multiple serving bowls like I have in the picture on the left. Scoop an even amount of the rice pudding into each bowl.

6. Garnish with crushed pistachios.

7. Enjoy with a friend!
