Fresh Tomato Salad


Here are two scenarios: you have people coming over for a summer BBQ and you're grilling hamburgers, kabobs, all of that good stuff. But, you feel like you need a good fresh salad to serve. I present to you my Fresh Tomato Salad. You can make a large bowl of it or make smaller bowls to serve individually. Either way, everyone is going to love the freshness of the tomatoes and the kick of flavor from the spicy olive oil.

The second scenario is you have left over fish or chicken breast from the night before, you don't feel like cooking, but you want some veggies on the side. I present to you my Fresh Tomato Salad, yet again. It will take you only 5 minutes to prep this delicious and nutritious side salad.

So, no matter how you eat this salad, I think it's going to be the perfect staple salad of the summer. Did I mention it's dairy free and gluten free? It's perfect for anyone.

Prep time: 5 minutes

Total time: 7 minutes


This recipe is dairy free, gluten free, vegetarian, and vegan.

 

Ingredients:

1. 3 tomatoes chopped into chunks

2. Slivers of red onion

3. 1 TBSP of capers

4. Spicy extra virgin olive oil

5. Maldon salt

6. Chiffonade basil to garnish

 

Instructions:

1. Grab a serving bowl.

2. Add the tomatoes, red onion, and capers in.

3. Drizzle in the spicy olive oil, sprinkle on salt, and garnish with basil.

4. Mix well and enjoy!
