Simple, delicious breakfast inspiration for your week. We love breakfast and we love tacos, so here are my Harissa Breakfast Tacos. They are a great combination of spicy and savory. This is the easiest breakfast to make in under 10 minutes and it's perfectly balanced. You have fiber from the arugula and avocado, healthy fats from the avocado and olive oil, protein from the eggs, and carbs from the tortillas. Let's get to the recipe!

This recipe is dairy free and vegetarian.
1 tbsp extra virgin olive oil
2 tbsps mild harissa
Less than ¼ tsp salt
2 mini tortillas
½ avocado, sliced thinly
Flaky salt to garnish (optional)
1 tbsp fresh parsley, finely diced to garnish
1.Prep the eggs: grab a small frying pan and drizzle in olive oil on medium high heat. Once you can smell the olive oil, add 1 tbsp harissa onto opposite sides of the pan to create a well for the eggs. Crack in 1 egg into each harissa well. Salt to taste. Cover the pan and cook eggs to your liking.
2. Prep the rest: have the arugula, avocado, and tortilla wraps ready and set them aside. Warm the tortillas if you'd like.
3. Build the tacos: grab a serving plate and add the two tacos. Add arugula into each taco. Add the harissa egg into each taco. Garnish with 3 avocado slices on each & fresh parsley. Seasons with salt & zaatar to taste. Drizzle on olive oil if you'd like. Enjoy!
