Lentil Tabbuleh

If you don't know what tabbuleh is, it's a traditional Levantine, plant based salad made with lots of parsley, and bits of tomato, bulgur, mint, and onion. It's a very well-known and common dish made in the Middle East and I wanted to remake it my own way. I made it my own by adding lentils and it turned out spectacular! It was delicious and used for my meal preps for school. I hope you guys give it a try. Let's get to the recipe!


Yields: 2-4 people

Prep time: 35 minutes

Total time: 45-50 minutes


This recipe is dairy free, gluten free, vegetarian, and vegan.

 

Ingredients:

1. 1 cucumber

2. 2 tomatoes

3. 4 bunches of parsley

4. 1 cup of cooked lentils

5. 4 lemons

6. Salt

 

Instructions:

1. Cook the lentils in a pot filled with water half way. Cook until soft and place on the side for later use.

2. Finely chop the bunches of parsley. I mean VERY finely. Add to a bowl.

3. Finely chop the tomatoes and cucumber as well and add to the bowl.

4. Add the lentils on top.

5. In a separate bowl squeeze the lemons and pour onto the tabbuleh you just made.

6. Add ½ TBSP of salt onto the salad. Mix well and do a taste test to see if it needs more salt. Add if need be.

7. Enjoy!
