Mixed Greens with Jalapeño Tuna


I get so annoyed when I take the first bite of a delicious recipe, but I can't get the picture to show how GOOD it is. This Mixed Greens with Jalapeño Tuna is going to be on repeat for me this summer and it's going to be on repeat for you. Are you someone who loves tuna and wants a healthier, more nutritious way of enjoying it? I got you. Now are you someone who has tried tuna but can't seem to enjoy it? I also got you. You're going to need tuna, jalapeño, arugula, green onion, green bell pepper, cucumber, avocado, lemon, and olive oil. The flavors of the jalapeño, lemon, and olive oil are going to minimize that "fishy' taste, and instead add a kick of flavor! SO, if I've influenced you enough, let's make the recipe!

Prep time: 10 minutes

Total time: 12 minutes


This recipe is dairy free, gluten free, and pescatarian.

 

Ingredients:

1 can of Bumblebee white tuna in water

2. 2 TBSPs jalapeño finely diced

3. 2 handfuls of chopped arugula

4. 1 scallion finely diced

5. 1 cucumber finely diced

6. ¼ green bell pepper finely diced

7. 3-5 slices of avocado

8. 1 lemon

9. Extra virgin olive oil

10. Salt and lemon pepper

 

Instructions:

1. First grab your can of tuna and drain the water. Add the tuna into a bowl. Squeeze on the juice of ½ lemon and add your jalapeño. Add salt to your liking. Mix well. Leave for later.

2. Add ingredients 3-6 into a serving bowl. Add on your tuna jalapeño mix.

3. Drizzle on olive oil and squeeze on a bit more lemon. Season with salt and lemon pepper. Mix well. Taste test for any more olive oil, lemon, salt, or lemon pepper. Add if necessary. It's always up to YOU.

4. Top with several slices of avocado.

5. Enjoy!
