Red Kidney Bean Nourish Bowl

You all know that my favorite thing is to come up with different mixtures of grains, veggies, and herbs and every time I make a new one I say it’s my favorite. Well, this one is definitely one of my favorites for sure! The heart of palm gives this bowl such a delicious flavor and it's nice to change it up a bit. I hope you guys give this plant-based bowl a try! Let's get to the recipe.


Yields: 1 bowl

Prep time: 10 minutes

Total time: 15 minutes


This recipe is dairy free, gluten free, vegetarian, and vegan.

 

Ingredients:

1. 2 handfuls of kale

2. ½ slices avocado

3. ½ can of washed red kidney beans

4. 1 finely chopped celery stalk

5. ½ tomato

6. ¼ cup of cooked quinoa

7. 1 heart of palm

8. Extra virgin olive oil

9. ½ squeezed lemon

10. Sprinkle of hemp seeds

11. 1 serving of sliced almonds

12. Salt

13. Black pepper, oregano

 

Instructions:

1. Grab a bowl.

2. Chop up your kale and massage with olive oil, salt, and lemon. Place into the bowl.

3. Now add the your washed kidney beans into the bowl.

4. Add the quinoa.

5. Now, chop up all other of the ingredients and place into the bowl.

6. Sprinkle on some hemp seeds and sliced almonds.

7. Lastly, grab a small bowl and make the vinaigrette: mix in the lemon, 1-2 TBSPS of olive oil, and sprinkle on some salt, black pepper, and oregano to your liking.

8. Mix and enjoy!
