Zaatar Cauliflower Bites with Whipped Feta Dip

It's football season, it's fall, it's TIME for delicious & heartwarming apps! These are my Zaatar Cauliflower Bites with a Whipped Feta Cottage Cheese Dip!


Not only is this such a flavorful combo, but it's also an easy recipe to follow along AND a high- in-protein snack. These are great to have as a side dish for dinner, as an appetizer to have when you're hosting, or as a snack in the middle of the day.


I recommend you grab a fresh head of cauliflower because in my personal experience, it's always fresher than bagged cauliflower. They will come out crispier and less mushy. As for the feta dip, you want to ensure you purée the dip to a not so thin- you want a thick consistency so it's easy to dip the cauliflower into the dip!


Let's get to the recipe shall we?


Yields: 1-2

Prep time: 15 minutes

Total time: 55 minutes


This recipe is gluten free and vegetarian.

 

Ingredients:

1.1 cauliflower head, washed & chopped

2. Extra virgin olive oil

3. Salt

4. Zaatar


Dip:

5. 1 cup feta cheese

6. ½ cup cottage cheese

7. 1 garlic clove

8. 1 TBSP fresh parsley

9. 1 TSP zaatar

10. 1-2 TBSPs extra-virgin olive oil

11. Juice of ½ lemon

 

Instructions:

1.First, grab your head of cauliflower and rinse it very well. Have the oven preheated to 400.


2.Then, place your cauliflower head onto a cutting board on its side to chop off the stem completely. Then, chop the cauliflower into separate florets and place them into a bowl.


3.Season the cauliflower with extra virgin olive oil, salt, and Zaatar. Mix well with your hands. Add the florets to a baking sheet with parchment paper and make sure the cauliflower is well spread out. When they touch, it will make the cauliflower soggier because there isn't enough air flowing through to cook them properly. This is why we want a hot oven and room for the cauliflower to cook!


4. Roast in the oven until crispy, they may need up to 40 minutes.


5. Now grab a food processor to make the whipped feta. Add in the ingredients to the food processor and purée. You don't want it to be too thin or too thick. Taste test for salt or Zaatar, add more if necessary. Purée again.


6. Add the whipped feta to a bowl. Add the cooked cauliflower to a serving plate.


7. Feel free to garnish with more parsley. Enjoy!
