Arugula Walnut Salad

Anytime I make a carb-y meal, I always make sure to have some veggies on the side, and most of the time I just make a quick side salad like this one! This salad took me about 8-10 minutes to make and it was a delicious and nutritious Mediterranean-inspired dish. Also a great meal prep salad if you want to add some chicken or shrimp to. Let's get to the recipe!

This recipe is dairy free, gluten free, vegetarian, and vegan.

Ingredients:
1. 1-2 handfuls of arugula
2. 1 tomato
3. 1 cucumber
4. ½ bell yellow bell pepper
5. 1 scallion
6. 1 celery stalk
7. Handful of walnuts
8. Sprinkle of hemp seeds
9. Extra virgin olive oil
10. ½ squeezed lemon
11. Salt
12. Black pepper, garlic powder, ½ TBSP oregano, 1 TSP dried mint, 1 TSP sumac

Instructions:
1. Grab a bowl.
2. Finely dice all your veggies and add to the bowl.
3. Crush the walnuts in your hands and add to the bowl.
4. Sprinkle on hemp seeds.
5. Now, in a small bowl make the vinaigrette: mix in 2 TBSPs of olive oil, ½ squeezed lemon, salt, black pepper, garlic powder, 1/2 TBSP oregano, 1 TSP dried mint, and 1 TSP sumac. Mix well and drizzle onto the salad.
6. Mix and enjoy!
