Lemon Pepper & Garlic Chicken Wings

All of my friends who need to follow a dairy free and/or a gluten free diet and want to enjoy a good wing these are for you. These are my Lemon Pepper & Garlic wings and let me tell you my fiancé ate half of the wings you see on this plate. They were that good.


I am a big fan of enjoying some wings with friends when I go out to dinner but I know they can be beer battered, which can cause some GI discomfort for me. So I thought to myself, why not make some at home that are enjoyable, delicious, and GI friendly!? These lemon and garlic wings are so easy to make and you can pair them with a side salad and carb for dinner, or just make them for friends when they come over. They are the fresh-kinda flavor that this spring weather makes me want.


All you need is lemon, garlic, lemon pepper, dried thyme, parsley, olive oil, and salt. Everything you'd already have in your fridge. Let's get to it.

This recipe is dairy free and gluten free.

 

Ingredients:

1 lb fresh cut chicken wings bone-in skin-on

Salt & black pepper

8 cloves garlic, minced

Juice of 2 lemons

1 tbsp extra virgin olive oil

¼ tsp lemon pepper

½ tsp dried thyme

Fresh parsley to garnish

 

Instructions:

1.Prep: preheat the oven to 375. Have the wings dried and a baking sheet with parchment paper on it. Add salt and black pepper to the wings for taste. Bake in the oven until crispy (or when you cut into it and the juices run clear not red/pink).


2. Sauce: add the garlic, lemon, olive oil, lemon pepper, dried thyme, and ½ tsp salt to a bowl and mix well. You will coat the wings with this.


3. Serve: Remove the wings from the oven and coat with sauce. Feel free to add them back into the oven for 5 minutes to set the sauce in, but your wings are ready regardless. Enjoy!
