Syrian House Salad

This is the most requested recipe and it's my Syrian House Salad. I grew up having this at almost every dinner as the perfect side salad that goes well with most meals. It could be any kind of Syrian meal and my mom will ensure she whips up a Syrian house salad to ensure we have our source of vegetables. You can now see where I got my love of nutrition from.


This salad is made of lettuce, tomato, green onion, cucumber, cabbage, and parsley with a simple olive oil and lemon dressing. All you have to do is chop up the veggies and pour on the dressing, no baking required. This can be whipped up in less than 20 minutes, so if you're stuck on what kind of veggies you want to have one night, make this salad and pair it with a source of carbs and protein like my mama does. Let's get to it!

This recipe is dairy free, gluten free, and vegan.

 

Ingredients

2 medium tomatoes, medium chopped

1-2 cucumbers, medium chopped

5 lettuce leaves, finely chopped

1 cup finely chopped cabbage

â…“ cup finely chopped parsley

2 scallions, finely diced

2 ½ tbsp extra virgin olive oil

Juice of 2 small lemons or 1 large lemon

1 tsp sumac

Salt to taste

5 fresh mint leaves, finely diced

 

Instructions

1. Prep the veggies: Grab a large serving bowl. Prepare tomatoes, cucumbers, lettuce, cabbage, parsley, and scallion. Add them to the bowl.


2. Make dressing: Grab a small bowl and add in extra virgin olive oil, lemon juice, sumac, and salt. Mix very well and pour onto the salad.


3. Add mint: Once you know you’re going to serve the salad, prepare the fresh mint. You don’t want to pre-chop mint because it will oxidize and turn black. Add to salad. Mix salad.


4. Taste test: Add more salt or lemon. Serve and enjoy!
