Harissa Egg & Tahini Toast



My Middle Eastern way in making your daily avocado toast a bit sexier. This is my Harissa Egg & Tahini Toast. Harissa is a Moroccan red pepper sauce used in daily cooking and it's a delicious way to enjoy your eggs in the morning.


So, here is another toast recipe coming at you because they are the easiest way to get your nutrients for the day in one meal! Just taking a quick glance at this toast I know that I have my healthy fats from the tahini, my protein from the eggs, my fiber from the arugula, my carbs from the sourdough, and my satisfaction factor from the harissa. So, if you are liking the sound of these flavors, keep reading for the recipe!

Prep time: 5 minutes

Total time: 10 minutes


This recipe is dairy free, gluten free, and vegetarian.

 

Ingredients:

1 piece of sourdough

2 eggs

1 tbsp extra virgin olive oil

1 tbsp of harissa (or more)

Salt

Handful of arugula

½ avocado, thinly sliced

1 tbsp tahini

Fresh parsley to garnish

 

Instructions:

1. Toast sourdough: toast one piece of sourdough.


2. Cook eggs: While the bread toasts, grab a small frying pan and add olive oil and harissa. Stir the harissa in well on medium-high heat. Once you can smell the harissa, crack in the eggs. Salt to taste, cover the pan, and cook the egg until your liking. Once done cooking leave on the side.


3. Prep avocado and parsley: have avocado thinly sliced and parsley chopped.


4. Build toast: add the toast to a serving plate, top toast with arugula and 1 harissa egg. Layer on avocado slices. Drizzle on tahini to your liking. Garnish with avocado. Season with salt if you'd like. Enjoy!
