Spicy Whipped Cottage Cheese and Tomato Toast


I hear people saying that they're not obtaining enough protein in their breakfasts, so don't worry your internet best friend/future registered dietitian is here to take care of you. This is my Spicy Whipped Cottage Cheese and Tomato Toast and you're going to love how easy it is to make and incorporate into your morning routine. Pair this with 2 eggs and you'll have a total of at least 22 grams of protein in your morning.


All you need for this recipe is low fat cottage cheese, campari tomatoes (I chose these since they're small and perfect to layer on toast), avocado, parsley, and hot chili pepper oil. You not only have enough protein in this recipe but fiber, healthy fats, and carbs, which will make for a filling and balanced breakfast. The reason why I whipped the cottage cheese was to make it more enjoyable to eat! You'll understand why once you try it yourself.


Yields: 1 Portion: 1 toast

Total time: 15 minutes


This recipe is vegetarian.

 

Ingredients:

1 piece of sourdough bread

4 tbsp low fat cottage cheese

2 campari tomatoes, sliced into thin rounds

Salt

½ avocado, thinly sliced

Fresh parsley to garnish

Hot chili pepper flavored extra virgin olive oil

Black pepper optional

 

Instructions:

1. Prep: Toast sourdough bread. In a food processor add cottage cheese and puree until smooth consistency. Have avocado and parsley prepared. As for the tomatoes, slice and place them onto a paper towel. Salt and allow the salt to absorb any liquid. This will ensure your toast won't become soggy from the tomatoes on top. They only need 3-5 minutes.


2. Build: spread on whipped cottage cheese onto toast. Layer on avocado. Layer on sliced tomatoes. Garnish with salt to taste, parsley, and hot chili oil to your liking. Season with black pepper if you'd like. Enjoy!
