Smoked Salmon & Labneh Breakfast Sandwich

You’re sick and tired of every breakfast being egg-based, so I made you this Smoked Salmon & Labneh Breakfast Sandwich to switch things up!


The saltiness of the smoked salmon and labneh pair so well together and it’s a nice gut-friendly switch from your typical cream cheese spread. Labneh is a Middle Eastern strained yogurt that is used as a dip with pita for breakfast, but can be used in any way you want as a more savory substitute for a typical Greek yogurt.


Besides the smoke salmon and labneh, I added arugula, tomato, and avocado for extra fiber and nutrients. The smoked salmon is your source of protein here and the labneh is some extra added protein & healthy fats.


I want to note that if you follow a low sodium diet, this may not be the most optimal recipe for you due to the high in sodium smoked salmon. If you don’t follow a low sodium diet, just make sure that this isn’t a breakfast you regularly have due to the high sodium! It’s healthy and nutritious yes, but something to consider.


This breakfast was so easy to make and took less than 10 minutes to build. You can wrap it in parchment paper and take it on the go! Let’s get to the recipe.

Ingredients:

1 everything ciabatta roll (Trader Joe’s)

2 tbsp labneh

½ avocado, mashed

Arugula

4 pieces smoked salmon

2 thin slices tomato

1 tbsp finely chopped, fresh parsley

 

Instructions:

1.Toast: slice the bread in half and toast.


2. Prep veggies: have avocado, arugula, tomato, and parsley.


3. Build: spread labneh on one slice of bread and avocado on the other. Add handful arugula on top of labneh, layer on smoked salmon and tomato. Add fresh parsley to slice with avocado. Add avocado slice on top, slice sandwich in half. Enjoy!
