Turmeric Lentil & Vegetable Soup


It has officially snowed in New England, which means it's wholesome soup season! This is my Turmeric Lentil & Vegetable Soup and it is delectable. This is the kind of soup that your grandma would force feed you when you're sick with a cold or flu and for a good reason. It is filled with health-promoting ingredients like turmeric, lentils, onion, ginger, fennel, and cumin.


This soup is a fun and easy way to obtain a large batch of veggies in one slurp. Since the soup is going to be blended, you won't be able to tell there's six different veggies and lentils in there! All you have to do is cook the veggies and lentils well with broth, blend, and you have a simple and yet satiating soup. You will not need to worry about not reaching your daily fiber requirement with this soup. Let's get to the recipe!

Cook time: 30 minutes

Total time: 1 hour


This recipe is dairy free, gluten free, and vegan.

 

Ingredients:

5 tbsp extra virgin olive oil

1 red onion, medium chopped

½ fennel, medium chopped

1 carrot, medium chopped

½ yellow potato, medium chopped

1 turmeric, chopped into rounds

½ zucchini, medium chopped

1 tomato, medium chopped

¼ tsp grated ginger or pinch of ginger powder

1 tbsp tomato paste

½ tsp paprika

1/4 tsp black pepper

½ tsp cumin

Salt to taste

1 cup red lentils

Fresh parsley to garnish

 

Instructions:

1. Prep ingredients: have the lentils washed & the vegetables & seasonings prepared. Have water boiling in an electric kettle to use for the soup later on.


2. Cook onion: in a large pot on medium high heat add in the olive oil & onion. Stir and allow the onion to cook.


3. Add ingredients: once you can smell the onion, add in the fennel, carrots, potatoes, turmeric, zucchini, tomato, & ginger. Stir and allow them to settle. Add the tomato paste, paprika, black pepper, cumin, and salt. Add salt to taste. Add lentils. Stir in the seasonings well. Pour in 7-8 cups of bouling water. Stir & cover until the lentils & vegetable fully cook.


4. Immerse: use an immersion blender to blend the soup until smooth consistency. Taste for salt, add if necessary.


5. Serve: serve & garnish with fresh parsley if you’d like. Enjoy!
